Apple Cobbler

Ingredients:

Filling:

12 organic Envy apples

3 tbsp Lemon juice (about 1.5 lemons)

3 teaspoons vanilla

1/3 cup coconut sugar

1.5 tsp cinnamon

salt (to taste - roughly a pinch)

Crumb Topping:

  • 15 tbsp grass fed butter

  • 1.5 cups Bob’s Red Mill All Purpose Gluten Free Flour

  • 1.5 cups gluten free oats

  • 1.5 cups coconut sugar

  • 1.5 tsp organic cinnamon

  • 1/2 tsp organic nutmeg

Directions:

  1. Preheat oven to 350 degrees F

  2. Skin all apples

  3. Cut apples into thin slices

  4. Add apples to a large mixing bowl and add lemon juice, vanilla, coconut sugar, cinnamon, and salt

  5. Set aside apple mixture

  6. With a Kitchen Aid, add butter, flour, gluten free oats, coconut sugar, cinnamon, and nutmeg into a mixing bowl

  7. Using Kitchen Aid, knead the mixture into a dough consistency. May need to add more butter to get it to be a doughy texture.

  8. In a large oven safe pan, add apple mixture to the pan. Top with the crumble/doughy topping to cover the mixture evenly.

  9. Bake in the oven for 20-30 minutes or until the topping is golden brown.

  10. Take out of oven and let cool for a few minutes before serving.

  11. Top with your favorite ice cream. I recommend Straus Family Creamery Organic Vanilla Bean Ice Cream.
